Mayo both sides of the bread. You heard me!
This works because mayo is an emulsion with oil as the main ingredient by volume. You're spreading thickened oil with flavoring (usually traces of vinegar and salt) on the bread.
Top one bread slice with American cheese. Top the other side with your other cheese.
The American cheese brings the melt, and the second cheese brings the flavor. Teamwork!
Put on the rack in toaster oven and toast until the bread is crisp on the bottom and the cheese is melted on top.
Remove from toaster oven with spatula. Assemble into a sandwich, cheese on the inside. (Cheese on the outside is not recommended, but one of you is going to try it just to spite me, I know. You're hurting no one but yourself.)
